We had a fruit and veggie recipe challenge!
I didn’t have a lot of time to think of something new so I went with an old favorite.. cold veggie pizza. :)
Ingredients;
1 roll refrigerated crescent rolls (the tubes)
1 package (8 oz) cream cheese
1 package ranch mix
1/2 cup sour cream or mayo
chopped veggies (and cheese if you want)
Roll out dough on a baking ban and bake 10-12 minutes at 375
Chop up some veggies! Good choices: bell pepper, carrot, brocoli, cauliflower, olives.

Mix cream cheese, sour cream/mayo, ranch mix.

Wait a good 20 minutes for the crust to cool then spread with cream cheese.

Top with veggies and cheese. Super delicious and easy to make ahead of time!

I have been slacking with my cooking and therefore my posting. :( But here’s some pictures of me making leftovers awesome.
We had some baked potatoes that had been chilling in the fridge for quite a few days. How can I make this awesome?? I found some delicious toppings!

The thyme was left over from Thanksgiving! Apparently it lasts forever :)

Leftovers don’t have to be boring, guys!
Thrown together a bit haphazardly but still enjoyable!
Cut up your tempeh (I used half a package). 
Bowl the pieces for about 10 minutes. You really don’t need to cook it long but it’s easier on the stomach cooked more.

While that’s going, chop up some veggies. I used a bit of white onion, a stalk of celery, and half of a red bell pepper. I just wish I had some dill pickle!

Mix the veggies, cooked tempeh, and about half a cup of mayo with a tablespoon or so of your favorite mustard (I used the last of my whole grain mustard with some spicy brown). Salt and pepper to taste.

Eaten on toasted wheat bread with cheddar cheese, spinach, and tomato!

Om nom nom.
Oh, yeah! I also added hemp seeds. Link to the product here. They aren’t strongly flavored but are filled with protein and fiber.
